Chocolate Mousse

Ingredients

8oz Good dark chocolate
4 Eggs
2tbsp Brandy

Method

Separate eggs, whisk whites to stiff peaks
Melt chocolate, yolks, brandy in bain marie.
Stir in 1/3 whites to chocolate mixture
Fold chocolate mixture into remaining whites.
Cover and refrigerate for at least 4 hours.
