Old Irish Rice Pudding

7.2 Tbsp Arborio Rice
150 ml Water
900ml Milk
Grated lemon Rind
150 ml Cream
2.4 Tbsp Sugar
2 Eggs separated

  • Wash rice
  • Heat in saucepan with water until water is absorbed
  • Add milk, a pinch of salt, lemon rind
  • Reduce heat, simmer for 15 mins until cooked.
  • Remove from heat, allow to cool enough for egg not to scramble.
  • Add Sugar, egg yolk.
  • Fold in beaten egg whites.
  • Lightly coat top in more sugar, brown in 350 degree oven.
