7.2 Tbsp Arborio Rice
150 ml Water
900ml Milk
Grated lemon Rind
150 ml Cream
2.4 Tbsp Sugar
2 Eggs separated
- Wash rice
- Heat in saucepan with water until water is absorbed
- Add milk, a pinch of salt, lemon rind
- Reduce heat, simmer for 15 mins until cooked.
- Remove from heat, allow to cool enough for egg not to scramble.
- Add Sugar, egg yolk.
- Fold in beaten egg whites.
- Lightly coat top in more sugar, brown in 350 degree oven.
